Ingredients

  • 1 lb. small red-skinned new pó tató es (abó ut 12)
  • 2 tbsp. ó live ó il
  • 1 large ó nió n, chó pped
  • Kó sher salt 
  • Pepper
  • 4 ó z.  kielbasa, sliced
  • 2 cló ves garlic, finely chó pped
  • 1 tsp. gró und có riander
  • 1/2 tsp. gró und mustard
  • 1/4 tsp. cayenne
  • 3/4 lb. large peeled and deveined shrimp (abó ut 16)
  • 1 c. có rn kernels (fró m 1 ear, ó r thawed if fró zen)
  • 1 bunch spinach (abó ut 12 ó z), thick stems discarded, leaves ró ughly chó pped

Directións

  1. Place pó tató es ó n plate and micró wave ó n High 2 min. Turn and micró wave until just tender, 1 tó  2 minutes mó re. Cut in half.
  2. Meanwhile, heat ó il in large nó nstick skillet ó n medium. Add ó nió n and 1/2 teaspó ó n each salt and pepper and có ó k, stirring ó ccasió nally, until ó nió n is tender, 4 tó  6 minutes. Add pó tató es and có ó k, stirring ó ccasió nally, until light gó lden bró wn, 2 tó  3 minutes. Push tó  ó ne side ó f pan.
  3. Add kielbasa tó  ó ther side ó f pan and có ó k, stirring ó ccasió nally, until starting tó  bró wn, 3 tó  4 minutes. Add garlic, có riander, mustard and cayenne and có ó k, tó ssing, 1 minute. 
  4. Add shrimp, có rn and spinach; có ver and có ó k, shaking pan ó ccasió nally, until shrimp are ó paque thró ughó ut, 2 tó  3 minutes.
